On our plant-based journey I have discovered many tasty dishes! I realized that it’s really not that difficult to eat a plant based diet. I have experimented with new recipes and I have vegan-ized some of my tried and true recipes – and like anything else some are major successes and others are big-time flops. Thanks to the internet and the amazing people who come up with, test and share these tasty dishes there is no shortage of creative options.
Here are just a few winners for us that are in my rotation:
These gorgeous Banh mi bowls with sticky tofu are from Choosing Chia and were a cinch to put together and forgiving if you don’t have exactly the same ingredients she called for.

Glue & Glitter’s Vegan Spinach Artichoke Dip with Garlic Cashew Cream would be a hit for any Super Bowl party or any kind of get together! The only thing that I did different was I used marinated artichoke hearts along with some of the marinade from the jar for flavor and I cooked fresh spinach instead of frozen (because it’s what I had on hand). This was also the first recipe that I thought worked with the cashew cream!

CookieandKate.com is a go-to source for me. Her fresh, whole food, vegetarian recipes and recipe notes are supremely helpful and every recipe I have tried from her site has been good. I use her recipe for Perfect Steel-Cut Oats, and her Healthy Pumpkin Muffins are on a weekly rotation at the moment.

I have not really understood the fascination with cauliflower but every now and then it makes the rotation. I ventured out with this Sticky Sesame Cauliflower recipe from Connoisseurus Veg with pretty low expectations but this recipe delivers! The cauliflower turned out crunchy and the sticky sesame sauce was finger licking worthy. This is another go to site for me I’ve made other recipes from here that we have liked.
